I created X Marks the Spot for a very fun reason.
I was approached by Smash Cake So Cal (courtesy of my friend Laney at Life is but a Dish), an event planning company run by two young mom entrepreneurs. They wanted to put together a Cocktails and Cooking class for a small group. Laney did the cooking class and I did the cocktail class.
Smash Cake did everything else – they have an incredible eye and sure know how to organize a great party (see more here).
This was definitely a very fun and very creative event – there was even a couple there celebrating their 10 year anniversary!
It was a southwestern theme and I was to teach two cocktails. I knew I wanted to do a Margarita Bar, but what about the first drink?
The Margarita Bar would be the second drink I’d teach, but I needed something to start off with. I know people feel nervous about mixing liquor…and a lot of people shy away from gin (my favorite) so not knowing the group, I decided to go with two tequila cocktails. When we were in Playa del Carmen a few years ago, we had fantastic margaritas with pomegranate liquor and there is where the impetus for this delicious Clever Little Cocktail started.
So I started off with two parts: tequila and pomegranate liqueur. I wasn’t going to use lime, as that is a main ingredient in the margarita, so I opted for lemon instead. And the Pièce De Résistance? Ginger beer. So good, so refreshing, so balanced!
I garnished this beauty with prickly pear and pared lemon zest. I rimmed the glass with the prickly pear first, which leaves a pink cast, then dipped it in a combination of superfine sugar and edible iridescent glitter.
I had some left over from last year’s Christmas cookie decorating. It gives the edge of the glass a beautiful shimmer. (This would be fun for Shirley Temples at a kids’ party!)
X Marks the Spot
What you’ll need for 1 cocktail:
2 ounces tequila (you could use vodka instead)
1 ounce fresh lemon juice (about 1/2 lemon)
1 ounce pomegranate liqueur (such as Stirring’s)
1.5 ounce ginger beer (such as Q)
slice of lemon and prickly pear for garnish
How to make it:
Put the tequila, fresh lemon juice and liqueur in a shaker with ice and stir well. Strain into a glass over fresh ice and top off with the ginger beer. Rim the glass with the prickly pear, then dip in superfine sugar (with edible glitter dust if you can get it). Add slice of lemon and some prickly pear for garnish.
